Nourishing Immune boosting autumn broth

We have truly entered the autumnal time of the year. Yet it seems like we did not even experience a proper summer, so this change is not as noticeable, yet we should start to think about supporting our immune system in a different way. 

How to warm up quickly? Have some soup!

I love making this clear, nourishing vegan broth, which on a cold day warms the body from within. It is so simple, and I get to use one of the most useful gadgets in my kitchen – drumroll please for the Slow Cooker. 

The Antibacterial and Anti-inflammatory properties found in the Onions, Garlic and lemons, combined with the warming effects of Ginger, will give your immune system a much needed boost

Ingrediencies

  • 1 white onion
  • Fresh ginger, about 3cm, sliced.
  • 5 unwaxed lemons, sliced
  • 3 cloves of garlic
  • 10 peppercorns
  • 2 litres of water
  • Rosemary and Thyme spring (optional)

Chuck it all in the slow cooker on a low heat overnight, discard the solid ingredients, and Bob’s your uncle!

Tips how to use this delicious vegan broth

This broth is so versatile! It makes a fantastic base for a stew or you can add Ramen noodles to make your own version of this popular Japanese soup.

Or add honey, sip slowly, observe your body’s reaction and adjust the amount, you might get quite warm, it is best enjoyed before midday.

If you have any of the “Yin Deficiency” symptoms such as chronic constipation, excessive sweating, burning sensation in palms and feet etc, just omit the Ginger.
